Recipe of the Week
Zesty Flat Iron Steak


2 Tbsp brown sugar
2 tsp ground coriander
1½ tsp onion powder
1½ tsp garlic powder
1 Tbsp chili powder
1½ Tbsp thyme
1 tsp salt
1 2-lb flat iron steak


Mix first seven ingredients in small bowl. Score (small, random surface cuts) both sides of steak. Sprinkle both sides with seasoning mixture and rub into steak. Wrap tightly in plastic wrap and refrigerate for at least 30 minutes or up to 2 days.

Panfry in oiled, hot skillet for 3 to 4 minutes. Turn and cook another 3 to 4 minutes. Remove skillet from heat and let meat rest in warm pan until ready to serve (internal temperature should reach 140F). Slice and serve with pan juices.
