Turkey Florentine Burger


½ onion, diced

3 garlic cloves, minced

1 Tbsp. olive oil

1 ½ cups Tassel Ridge Chardonnay

1 ½ cup spinach leaves, coarsely chopped (plus extra for garnish)

1/3 cup bread crumbs

½ cup grated Parmesan cheese

1 Tbsp. Italian seasoning

1 ½ Tbsp. Dijon mustard

1 ½ lb. ground turkey

Salt and pepper to taste

4 whole-wheat hamburger buns, split


1 tomato, sliced

Spinach leaves

Mozzarella slices


Sauté onion and garlic with olive oil in a saucepan until slightly soft.  Add wine and bring to a boil and cook until wine is reduced to ¼ cup.  Let cool to room temperature.

In a food processor or by hand, rough chop the spinach leaves into bite-size pieces.  Combine the spinach, breadcrumbs, cheese, mustard, and onion mixture in a large bowl.  Crumble ground turkey over the mixture and combine gently before shaping into 5-oz patties.

Grill over medium-high heat for 12-16 minutes, turning once or until thermometer reads 165 degrees.  Juices should be clear.  Serve on buns with a slice of tomato and cheese.
