3 Granny Smith apples, cored and coarsely grated
½ cup finely chopped celery
1 tsp. poultry seasoning
1 tsp. salt
½ tsp. black pepper
1 ½ lbs. ground turkey
4 hamburger buns, split
1 cup whole cranberries
1 medium navel orange, with peel
1 Granny Smith apple, cored, with peel
3-5 Tbsp. granulated sugar
Place the fruits into a food processor with a tablespoon of sugar and pulse until mixture is finely chopped and well-mixed. Continue to add sugar a tablespoon at a time until desired taste is reached.
In a large bowl, toss first 5 ingredients together until well-blended. Combine this mixture with the ground turkey, but do not overmix. Shape the mixture into four patties and grill for 12-16 minutes, turning once. Internal temperature should reach 165 degrees, and juice of the meat should run clear. Serve on buns with a tablespoon of the cranberry relish.
