Tassel Ridge Wine-Simmered Brats with Riesling Mustard


2 pkg. plain bratwursts

1/2 bottle Tassel Ridge American Dry Riesling

½ onion, sliced

3 garlic cloves, sliced


In the bottom of a saucepan or small pot, place the sliced onions and garlic.  Lay the brats on top of onions and cover with the wine.   Cover the pot, and leave brats to barely simmer for 8-10 minutes.  Reserve the brat liquid and either place the brats in the refrigerator for later preparation or place immediately onto a medium-heat grill.  Brats will cook on grill for another 3-4 minutes before needing to be turned for another 3-4 minutes.

Prepare the wine mustard as below.

¼ cup dry mustard

1/8 cup of the reserved brat liquor (or more, depending on how thin you want your mustard)

¼ tsp. dried thyme

½ tsp. dried parsley

 Combine all ingredients and let chill until brats are ready for grilling.

Serves 6 to 10.
