Rhubarb Custard Pie

Ingredients

  • 3-4 cups chopped rhubarb
  • 1 1/2 cups sugar
  • 2 eggs
  • 1 cup milk
  • 3 TB flour
  • 1 TB butter
  • 1/2 tsp vanilla
  • Unbaked pie shell

Directions

  • Mix flour, sugar and rhubarb. Set aside.
  • Beat eggs, add milk and vanilla.
  • Add to rhubarb mixture.
  • Pour into unbaked pie shell.
  • Dot with butter.
  • Bake at 400 degrees for 15 minutes, then 350 for 30 minutes or until set.
