New York Strip Steaks with Gorgonzola Butter

Steak and Marinade Ingredients:

 4 – 8 oz. New York strip steaks

¼ cup olive oil

4 cloves garlic, thinly sliced

2 tsps balsamic vinegar

½ Tbsp dried rosemary

¼ tsp. salt

1/8 tsp. black pepper

Gorgonzola Butter Ingredients

 4 oz Gorgonzola cheese, room temperature

4 Tbsp unsalted butter, softened

½ Tbsp. minced chives

½ Tbsp. minced parsley

Salt as needed

 Combine first four ingredients in a food processor until well-blended.  Salt to desired taste.  Chill in refrigerator until ready for service.


For the marinade, combine the oil, garlic, vinegar, rosemary, salt and pepper in a glass dish or ziploc bag and mix well.  Add the steaks, cover or seal, and place in the refrigerator for 2 to 3 hours.  Remove when ready to grill.  On a medium-high heat, grill steak 5-7 minutes per side, or to desired doneness.  Place a heaped teaspoon of the prepared butter on top of the steak immediately after removing from the grill.
