Mother’s Day Egg Muffins

Ingredients

  • 3 eggs
  • 1/3 cup half & half cream
  • 1/3 cup mozzarella cheese
  • 1/3 cup cheddar cheese
  • 1/3 cup onion/garlic croutons
  • Dash of salt and pepper
  • OPTIONAL: chopped ham, cooked crumbled sausage

Directions

  • Beat eggs and cream.
  • Combine remaining ingredients with the liquid mixture and stir gently.
  • Spray large muffin pans with vegetable spray.
  • Bake at 325 degrees for 15 – 20 minutes.

Makes 4 very large muffins.
