Ingredients
MEAT:
- 1 ½ lbs lean ground beef
- ½ lb bulk pork sausage
- 2 large eggs, lightly beaten
- ½ cup fine dry bread crumbs
- 2 large ripe tomatoes, seeded and chopped
- ½ green pepper, finely chopped
- 3 scallions, finely chopped
- 1 large garlic clove, finely chopped
- ½ cup chopped parsley
- 1 teaspoon dried basil
- 1 teaspoon dried thyme
- 1 teaspoon summer savory (Dahl’s carries this spice. May not be Tone’s)
- ½ teaspoon salt
- ½ teaspoon black pepper
- 4 slices of bacon
NOTE: If fresh herbs are available decrease parsley to ¼ cup and substitute 1/8 cup chopped fresh basil, (1 T fresh thyme leaves and 1 T chopped summer savory)
UNCOOKED TOMATO SAUCE:
- 1 ½ lbs ripe tomatoes, peeled, seeded & chopped
- 1/8 cup olive oil
- ½ large garlic clove, finely chopped
- 2 scallions, thinly sliced
- 1 teaspoon dried basil
- 1/8 teaspoon salt
- ½ teaspoon black pepper
Directions
MEAT:
- Preheat oven to 350 degrees. Lightly grease a rectangular roasting pan. Place all the ingredients except bacon in a large mixing bowl and mix with your hands until just blended together. Shape into a long rectangular loaf and place into prepared pan. Lay 4 slices of bacon diagonally across and down the sides of the loaf. Bake for 1 ½ hours or until well browned. Remove from the oven and allow to cool about 15 minutes for easier slicing.

UNCOOKED TOMATO SAUCE:
- Combine all the ingredients in a non-metallic bowl. Cover tightly and refrigerate for 3 hours before serving. (YOU MAY SUBSTITUTE CANNED PETITE DICED TOMATOES FOR CONVENIENCE)
