  • ½ lb bulk pork sausage
  • 2 large eggs, lightly beaten
  • ½ cup fine dry bread crumbs
  • 2 large ripe tomatoes, seeded and chopped
  • ½ green pepper, finely chopped
  • 3 scallions, finely chopped
  • 1 large garlic clove, finely chopped
  • ½ cup chopped parsley
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 1 teaspoon summer savory (Dahl’s carries this spice. May not be Tone’s)
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 4 slices of bacon

NOTE: If fresh herbs are available decrease parsley to ¼ cup and substitute 1/8 cup chopped fresh basil, (1 T fresh thyme leaves and 1 T chopped summer savory)

UNCOOKED TOMATO SAUCE:

  • 1 ½ lbs ripe tomatoes, peeled, seeded & chopped
  • 1/8 cup olive oil
  • ½ large garlic clove, finely chopped
  • 2 scallions, thinly sliced
  • 1 teaspoon dried basil
  • 1/8 teaspoon salt
  • ½ teaspoon black pepper

Directions

MEAT:

  • Preheat oven to 350 degrees. Lightly grease a rectangular roasting pan. Place all the ingredients except bacon in a large mixing bowl and mix with your hands until just blended together. Shape into a long rectangular loaf and place into prepared pan. Lay 4 slices of bacon diagonally across and down the sides of the loaf. Bake for 1 ½ hours or until well browned. Remove from the oven and allow to cool about 15 minutes for easier slicing.
  • **Optional garnish to use with a slice of Mom’s Meatloaf

UNCOOKED TOMATO SAUCE:

  • Combine all the ingredients in a non-metallic bowl. Cover tightly and refrigerate for 3 hours before serving. (YOU MAY SUBSTITUTE CANNED PETITE DICED TOMATOES FOR CONVENIENCE)
