Ingredients
- 4 Tortillas
- 2 Jennie-O Turkey Breakfast Sausage Links
- 4 Egg whites
- 3-4 Potatoes
- ½ small onion
- 3 cloves garlic
- 1 small red pepper
- ½ cup Reduced Fat Shredded Cheddar Cheese
- ½ teaspoon Lawry’s Seasoning
- 2 teaspoons Frank’s Hot Sauce
- Pam Cooking Spray
- Salsa (as desired)
- Reduced Fat Shredded Cheddar Cheese (Optional)
Directions
- Preheat oven to 400 degrees.
- Begin cutting up potatoes. Spray the potatoes with Pam cooking spray and add Lawry’s seasoning.
- Place the potatoes on a cookie sheet covered with non-stick foil and bake for 40-50 minutes.
- Next, mix together egg whites. Add in a couple teaspoons of Frank’s hot sauce and mix together. Set aside.
- Meanwhile, begin slicing red pepper, onion and garlic.
- Heat a small skillet to medium high heat and spray with Pam.
- Add vegetables and sauté until cooked through.
- Once cooked through, remove from pan and set aside (cover with tinfoil to keep warm.)
- Add in turkey sausage to the same pan and cook them as directed on the package.
- Once cooked remove them and crumble them up into smaller pieces.
- Set aside and add egg mixture to the pan and scramble until cooked through.
- Begin making an assembly line of ingredients.
- By the time you cook the eggs, veggies and sausage the potatoes should be ready to come out of the oven.
- Simply add the ingredients you want to your burrito and roll it up!
