Ingredients

• 1 ¾ cup flour
• ¼ cup sugar
• 2 ½ tsp baking powder
• 1 T instant coffee
• 1 egg, slightly beaten
• ¼ cup Baileys Irish Cream
• ½ cup half & half cream
• 1/3 cup vegetable oil
• ½ cup mini chocolate chips

Directions

• In a large bowl, mix dry ingredients.
• In a small bowl, combine Baileys, half & half, oil & egg; add to dry mixture and stir just until combined. Stir in chocolate chips.
• Pour mixture into muffin tin that has been sprayed.
• Bake in preheated 400-degree oven for 20-25 minutes. Cool on rack for 5 minutes then remove from pan.
