Ingredients
- 1 ¾ cup flour
- ¼ cup sugar
- 2 ½ tsp baking powder
- 1 T instant coffee
- 1 egg, slightly beaten
- ¼ cup Baileys Irish Cream
- ½ cup half & half cream
- 1/3 cup vegetable oil
- ½ cup mini chocolate chips
Directions
- In a large bowl, mix dry ingredients.
- In a small bowl, combine Baileys, half & half, oil & egg; add to dry mixture and stir just until combined. Stir in chocolate chips.
- Pour mixture into muffin tin that has been sprayed.
- Bake in preheated 400-degree oven for 20-25 minutes. Cool on rack for 5 minutes then remove from pan.
