Grilled Italian Sirloin Burgers

½ cup onion, finely chopped
½ cup green pepper, finely chopped
1–2 cloves garlic, minced
1 tsp dried oregano
½ tsp black pepper
2 lbs ground sirloin
5–6 Tbsp Parmesan cheese, grated
4 slices mozzarella cheese
4 ciabatta buns
Bruschetta (recipe below)

Combine onion, green pepper, garlic, oregano, and black pepper. Add ground sirloin and Parmesan cheese and mix well. Lightly shape into four burgers, ¾-inch thick. Grill over medium high heat 5 to 7 minutes per side until burgers are cooked through (internal temperature should reach 160°F). Top with mozzarella cheese and Bruschetta and serve on grilled ciabatta bun. Serves 4.

Tassel Ridge® Bruschetta

4 large ripe Roma tomatoes, diced
2–3 green onions, thinly sliced
2–3 large garlic cloves, minced
8 large basil leaves, thinly sliced
2 tsp balsamic vinegar
1 Tbsp olive oil
salt and pepper to taste
Parmesan cheese to taste

Combine tomatoes, green onion, garlic, basil, olive oil, salt, pepper, and Parmesan cheese in a large bowl.
