- 6 medium red potatoes
- 2 cups Cheddar cheese, shredded
- 1/4 cup butter
- 1 1/2 cups sour cream
- 1/4 cup chopped onion
- 1 tsp salt
- 1/4 tsp pepper
- Cook potatoes in skins until just tender. Chill.
- Peel potatoes. Shred coarsely with grater or food processor.
- In saucepan over low heat, combine cheese and 1/4 cup butter. -Stir until almost melted. -Remove from heat. -Blend in sour cream, onion, salt, and pepper. -Fold in potatoes and turn into a greased casserole. Sprinkle with paprika. -Bake covered, for 30 minutes at 350 degrees.
