Gourmet Potatoes

Ingredients:

  • 6 medium red potatoes
  • 2 cups Cheddar cheese, shredded
  • 1/4 cup butter
  • 1 1/2 cups sour cream
  • 1/4 cup chopped onion
  • 1 tsp salt
  • 1/4 tsp pepper
  • Paprika

Directions:

  • Cook potatoes in skins until just tender. Chill.
  • Peel potatoes. Shred coarsely with grater or food processor.
  • In saucepan over low heat, combine cheese and 1/4 cup butter. -Stir until almost melted. -Remove from heat. -Blend in sour cream, onion, salt, and pepper. -Fold in potatoes and turn into a greased casserole. Sprinkle with paprika. -Bake covered, for 30 minutes at 350 degrees.

Serves 8.
