Ingredients
- 1 garlic clove
- 6 slices bacon
- 3 tbsp. Dijon mustard
- 1/2 tsp. salt
- 1/2 tsp. lemon pepper
- 1 (4-pound) beef tenderloin
Directions
- Mince the garlic in a food processor. Add the bacon, Dijon mustard, salt and lemon pepper and process until smooth.
- Pat the beef dry and spread half the mustard mixture over the top; place on a rack in a shallow roasting pan. Broil for 7 minutes. Turn the beef and spread with the remaining mustard sauce. Broil for 7 minutes longer.
- Roast the beef at 350 degrees for 15 minutes or until done to taste. Roast to 135 degrees on a meat thermometer for medium-rare or 145 degrees on a meat thermometer for medium. Let stand for 5 minutes before slicing.
