Cheddar-Apple Mini Quiches


30 mini phyllo shells (two 1.9-oz pkgs)

2 medium Granny Smith apples, finely diced

4 large eggs

1 tsp Dijon mustard

¼ tsp salt

pinch freshly ground pepper

pinch ground nutmeg

8 oz sharp Cheddar, cut into small ½-inch squares


Preheat oven to 350°F. Arrange shells on a large parchment-lined baking sheet. Divide apple among shells. Whisk eggs, mustard, salt, pepper, and nutmeg in large measuring cup. Pour egg mixture over apple in shells (do not overfill shells). Place cheese square in each shell. Bake until egg is set, cheese is melted, and shells are starting to brown around the edges, about 15 minutes. Let cool slightly before serving. Makes 30.
