Wine recommendation—Tassel Ridge In The Dark
2 lb beef petite shoulder tender
salt and black pepper as needed
2 Tbsp canola oil
2 Tbsp fresh chives, cut into 2 1/2-inch pieces
12 soft white dinner rolls (2 1/2-inch diameter)
Olive oil as needed
Blue Cheese Butter:
4 oz mild blue cheese, room temperature
4 Tbsp unsalted butter, softened
1 Tbsp chives, minced
salt as needed
Season beef with salt and pepper. Heat canola oil in sauté pan; add beef and sear on all sides. Roast in 400°F oven to medium rare to medium doneness. Carve into thin slices.
Spread 2 tsp Blue Cheese Butter on top half of each roll; arrange 5 to 6 chives pieces on butter. Carefully invert top half of rolls over beef. Arrange on rectangular plate. Makes 12 sliders.
